Peanut Butter Choc Chip Cookies

Crispy on the outside, soft & chewy on the inside, and it involves peanut butter - so need I say more?

And not to mention they are sugar free - I used stevia for sweeten mine but feel free to use whatever sugar you prefer and of course, they are also gluten free & dairy free!

Peanut Butter Choc Chip Cookies

Serves 9

Ingredients

  • 3/4 cup almond meal

  • 1 tbsp tapioca flour

  • 1 tbsp coconut flour

  • 1/2 tsp baking soda

  • 1/3 cup granulated stevia (or sugar of choice)

  • Pinch of salt

  • 2 tbsp coconut oil, melted

  • 1 egg

  • 1/2 cup natural peanut butter

  • 1 tsp vanilla extract

  • Dark Chocolate, chopped (measure with your heart)

Method

  1. Preheat your oven to 180 degrees, fan forced, and line a baking tray with baking paper.

  2. In a large bowl, combine all the dry ingredients. And in a separate bowl combine all the wet ingredients.

  3. Pour the wet into the dry ingredients and stir to combine and form a cookie dough texture.

  4. Fold in chopped chocolate.

  5. Roll mixture into 9 balls and flatten on the lined baking tray.

  6. Place in the oven to bake for 10 minutes or until just golden.
